The Liverpool forward captained his country in Agadir on matchday one of Group B on Monday night.
Egypt had fallen behind to a finish from Prince Dube for Zimbabwe midway through the first half.
But Omar Marmoush brought the Pharaohs level with an emphatic effort on 64 minutes and Salah then sealed their comeback right at the end.
Bringing the ball under control inside the area, he dispatched a clinical low strike to secure victory.
Salah and Egypt are back in action at the tournament on Friday (December 26) when they face South Africa.
